Hòa tan tinh bột khoai tây và nước trong một cái bát. Để yên trong khoảng 1 giờ cho đến khi tinh bột chìm xuống đáy, bỏ phần nước trong bên trên. Cho lòng trắng trứng vào và trộn đều lên. Làm nước mắm chua ngọt: 200ml nước ép thơm, 30g đường, 3 muỗng canh nước tương, 2 muỗng canh giấm táo, 2 muỗng canh tinh bột khoai tây (hoặc bột bắp), 2 muỗng canh nước, hòa tan đều.
Trộn thịt lợn với 1 muỗng canh rượu gạo, 1 muỗng cà phê bột gừng (hoặc gừng băm nhỏ), 1 muỗng cà phê nước tương, 1 muỗng cà phê muối, một vài hạt tiêu đen rồi để vào ngăn mát tủ lạnh 30 phút để thịt ngấm gia vị. Cho thịt lợn vào bát bột (từ bước 1) và trộn đều lên.
Đặt chảo lên bếp, đun nóng dầu ăn rồi cho thịt vào chiên vàng đều rồi vớt ra giấy thấm dầu. Trong một chảo khác, đổ nước sốt chua ngọt vào nồi. Đun sôi nước sốt trên lửa vừa cho đến khi sôi lên. Tiếp tục cho cà rốt vào nước sốt và đun sôi trong 1 phút. Thêm các rau quả còn lại và đun sôi nước sốt thêm 2 phút nữa. Khi nước sốt sánh lại thì tắt bếp.
